Easy Roast Chicken

Roast chicken is a classic dish all over the world. A classic roasted chicken, one of the great staples of cooking and a symbol of comfort and perfect simplicity, makes a delicious and healthy dinner that never goes out of style. It's super easy and super tasty, fills your house with the most wonderful aroma while it's cooking, is elegant enough for Sunday dinner, and easy enough for any other night of the week. Plus the leftovers can be used for sandwiches, salads, and quick meals all week long.

 

EASY ROAST CHICKEN

The original recipe comes from Eat Better, Live Better (by Reader's Digest 1982) and calls for a 3 pound chicken. I find that most organic chickens these days are around 5 lbs, so it’s takes a bit longer than this recipe. I check it after an hour with a meat thermometer and let it continue to cook until it registers 180 degrees (usually about 1 1/2 hours).

Preheat oven to 400 degrees. Sprinkle 3 lb chicken inside & out with salt & pepper, garlic, & lemon juice. Roast on a rack with some water poured in the roasting pan. Cook for 1 hour without opening the oven door. Allow chicken to rest for 5–10 minutes.
